equally good for hot and cold sandwiches, French bread pizzas / cheesy bread, and Bruschetta / little toasts with soft cheeses. We do all of the above, but mostly cheesy bread.

origin story

Back in 2018, I got into baguettes. I watched lots of YouTube videos on shaping and scoring, picked up a Baker's Couche (pretentious canvas cloth), the works. After a few rounds, they were coming out decent. Full of pride, I asked my wife for her thoughts

They're OK, but they're too hard. You should make it soft, like Davanni's. Their hoagies are really good.

Hard to argue with that.

So I switched tactics, and tried out several recipes for soft bread doughs, eventually summiting Mt. Good Enough, with these here hoagie rolls, that are light and fluffy like the supermarket ones, but with much better flavor.

Set oven / toaster oven to 375°F. Slice log in half the long way.

Make a paste. Mix softened butter (1/3 stick), olive oil (2 tbsp), and garlic powder (1/2 tsp). Add grated parm or pecorino until it's spreadable.

Spread the paste evenly, all the way to the edges of the logs.

Top with even layer of mozzarella.

Bake until edges golden brown (10-15 min).

Move to cooling rack and top with dried oregano.
