My take on cinnamon rolls adds riced sweet potatoes, uses maple syrup in place of sugar, spelt makes up 20% of the flour mix, with a tangzhong for a soft and fluffy texture
maple glaze
While still warm, the rolls are topped with a maple powdered sugar glaze, which seeps in and flavors from within.
The glaze cools to form a light shell, which makes these relatively neat to eat, by cinnamon roll standards anyways.

We eat sweet potato fries regularly, and the prep work leaves you with the planks but also a handful of offcuts.
This recipe was the result of figuring out what to do with those offcuts. Now they get saved, boiled, and riced.
